The Pisco Sour is Peru's emblem: pisco, lime, syrup, egg white and three drops of Angostura, with its white foam on top. But it's more a template than a recipe — a balance that takes a thousand voices.
The sour is five levers: spirit, acid, sweet, foam and bitter. Change one and you have a new sour. From the Andean pantry — passionfruit, goldenberry, purple corn, algarrobina, muña, rocoto — come the directions; from technique, the clarified and vegan ones.
The mother ingredient is the sour's own balance. Keep the structure, change the voice — and respect the pisco.
Method
The mould: 45 pisco · 25 lime · 20 syrup · 1 egg white · 3 drops Angostura. Dry-shaken then shaken with ice, double-strained, foam on top. Each direction changes one piece of the sour and rebalances.
The sour's balance: pisco, acid, sweet and foam. Change one voice, keep the structure.
