The IBA's own tropical statement.
Two Havana Club rums, amaretto, passion fruit and pineapple, muddled with ginger — the association's modern tiki flagship.
Ingredients
- Aged Havana Club Rum30 ml
- Smoky Havana Club Rum30 ml
- Amaretto15 ml
- Frangelico5 ml
- Maraschino Luxardo5 drops
- Passion Fruit Puree30 ml
- Fresh Pineapple Juice90 ml
- Fresh Lime Juice30 ml
- Ginger1 slice
Garnish
Garnish with citrus and a dehydrated pineapple slice.
Method
- 1In a shaker muddle a thin slice of ginger, pour all other ingredients.
- 2Shake vigorously with ice.
- 3Strain into a chilled Tiki mug filled with pebble ice.
The lesson
Great tiki hides its complexity behind fruit. The drinker tastes 'tropical'; the bartender tastes eight balanced ingredients.
