Don's Special Daiquiri
Donn Beach's blueprint for tiki.
Two rums, passion fruit, lime and honey flash-blended over crushed ice — the original tiki daiquiri from the man who invented the genre.
Ingredients
- Gold Jamaican Rum30 ml
- Cuban Rum15 ml
- Passion Fruit Syrup15 ml
- Fresh lime juice15 ml
- Honey Syrup15 ml
Garnish
Garnish with 1/2 passion fruit.
Method
- 1Blend for a few seconds in a milkshake mixer with crushed ice.
- 2Pour into a footed copo glass and fill with more crushed ice.
The lesson
Tiki is engineered complexity: many small parts, none dominant. Blending with crushed ice is a technique, not a shortcut.
