Espejismo — a coupe holding a completely crystal-clear liquid, transparent as water, with a single basil leaf floating; a clarified milk punch

Espejismo

Looks like water. Tastes tropical.

White agricole rum · Pineapple & mango · Lime · Basil & ginger · Whole milk (clarified)

A mirage is seeing water where there is none. This drink does the opposite: it looks like water and, on the sip, it's a tropical garden. It was born beside Bilita Mpash, chasing the same idea — deceiving the senses — by another route: transparency.

It reaches the glass crystal-clear and tastes of ripe pineapple and mango, lime, the grassy backbone of agricole rum and a cool whisper of basil and ginger. The trick is a milk punch: you build the whole punch, then clarify it by curdling it into hot milk. One technique, one clean flavour, and a stable liquid you batch ahead and pour in seconds.

It's the serene twin of Bilita Mpash: where that one is strawberry, memory and fire, this is tropics, calm and clarity. Two answers to one question — can a cocktail fool the senses and still be honest on the bar?

Method

Clarified milk punch (makes ~10 coupes). Mix 300 ml white agricole rum, 200 ml pineapple juice, 140 ml lime juice, 120 ml mango purée, 130 ml cane syrup (2:1), 10 g grated ginger and 10 basil leaves. Heat 250 ml whole milk to ~70°C and pour the punch into the milk — never the other way round — so it curdles. Rest 1 h chilled, then filter through a superbag and a coffee filter until crystal clear. Serve 80 ml well chilled, no ice, up in a coupe. Garnish: a single basil leaf floated on top. Keeps ~2 weeks refrigerated.
