Tomato Dirty Martini
A Bloody Mary that learned manners.
Vodka or gin · Dry vermouth · Clarified tomato water · Salt · Cherry tomato · basil
The Dirty lives in one place: the dirty. Tomato water — the crystal-clear liquid that ripe blended tomato gives up when strained without pressing — is the cleanest dirty there is: pure, transparent umami. It gives you all the sap of a Bloody Mary without a drop of cloudiness or colour.
There's the dominant constraint, the same as the Black Garlic Dirty: umami and clarity. But tomato water takes it to the extreme — it's the route of total transparency. A Bloody Mary that learned manners: all the depth, no weight, no colour. And it's another brine for the menu, this time on the umami axis, not the saline one. The base is a lever: vodka as the house default (lets the tomato lead), gin when you want garden company.
The mother ingredient is the clarified tomato water — ripe tomato blended and strained through muslin without pressing, into a crystal-clear liquid. One production, and each direction dresses it differently: on its own, with basil, with the Bloody's spice, or signed with sherry.
Method
A stirred Dirty over clarified tomato water: transparent umami instead of cloudy brine. Four directions that solve the same axis —umami and clarity— differently: the water alone, with garden herbs, the whole Bloody clarified, or signed with sherry.
