Daiquiri, No Sugar

Daiquiri, No Sugar — a frozen coupe with pale crystalline liquid and a lime twist

Sweetness is structure; it moves.

Rum · Lime · Alternative sweetness (honeyed rum · agave · PX)

A Daiquiri is three things in balance: rum, lime and sugar. Take out the sugar and you don't get a 'drier' Daiquiri — you get a sour imbalance. So the rule we break isn't 'remove the sweet', it's 'where the sweet comes from': an older, honeyed rum, a touch of agave or a sweet wine, or ripe fruit itself can hold it up without table sugar.

The lesson: sweetness isn't an optional ingredient, it's a structural piece that holds up the acid. You can move it, but you can't remove it without rebalancing.

Method

A Daiquiri where table sugar is swapped for another source of sweetness —an old honeyed rum, agave nectar or a sweet wine— adjusting the lime to keep the edge. Shaken very cold, frozen coupe.
