Rice & Mango

The mess you actually want.

Aged rum or junmai sake · Toasted-rice & coconut horchata · Ripe mango · Lime · Salt · toasted rice

It came from an idiom. In Spanish, 'esto es un arroz con mango' — 'this is a rice with mango' — is the name for chaos: an impossible mix, a mess that shouldn't work. The Lab takes it literally — because rice and mango have loved each other for centuries, from Bangkok to Manila, in mango sticky rice. The name is the insult; the glass is the answer.

The real problem isn't flavour, it's texture. Rice brings no sweetness: it brings body —creamy, horchata or amazake— and a toasted aroma. Mango brings the fruit and, above all, the acidity. The risk, as with anything creamy, is the milkshake: that it turns into a heavy dessert. You dose it and correct with lime and a pinch of salt —the sticky-rice signature— never with more sugar. And for elegance, you clarify.

They all share one creamy base: toasted-rice and coconut horchata, salt measured. One production, and what changes between drinks is the state the rice is in —fresh, clarified, fermented, toasted or frozen. The base spirit is a lever, not a decision: house aged rum —the bridge to coconut and the tropics— with junmai sake as the alternative that stays in the rice family. The same mess, two readings.

Method

A cocktail built on a standardised creamy base (toasted-rice and coconut horchata, salt measured) and ripe mango, balanced with lime. Base of choice — house aged rum, junmai sake as the alternative. Five directions that put the rice in a different state —fresh over ice, clarified up, fermented as amazake, toasted to a nutty edge, or frozen in a frappé— to solve the same tension five ways: creaminess, fruit, acidity and toasted aroma.

Toasted-rice & coconut horchata — rice toasted and soaked, coconut milk and the salt measured, fine-strained. One production, the whole Rice & Mango menu.

The directions

One constraint, several exits

  • Rice & Mango — The faithful · sticky
    Direction 1

    The faithful · sticky

Starch leads: creamy body, the tart mango lifts it.

50 aged rum · 60 rice-coconut horchata · 20 ripe mango purée · 10 lime · pinch of salt. Short shake, pebble ice. Toasted rice and a mango slice.

The reference — mango sticky rice in a glass. Wants rum.

  • Rice & Mango — Clarified · sake
    Direction 2

    Clarified · sake

Creamy → crystalline: sticky rice made transparent.

Clarified base (milk/rice-wash with the horchata and mango, cut with lime, strained). 60 junmai sake · 45 clarified base · 5 lime to adjust. Stirred, frozen coupe, one toasted rice grain.

The elegant one — a competition candidate. Wants sake.

  • Rice & Mango — Fermented · amazake
    Direction 3

    Fermented · amazake

Fresh → fermented: koji umami, funky sweetness.

50 sake or rice shochu · 40 amazake · 20 mango purée · 10 lime. Shaken, short glass. A dusting of rice.

The deep one — school material.

  • Rice & Mango — Toasted · senbei
    Direction 4

    Toasted · senbei

Raw → Maillard: the rice goes nutty, mango for contrast.

Rum (or sake) fat-washed with toasted-rice butter. 50 toasted spirit · 20 horchata · 15 fresh mango purée · 10 lime. Rocks glass, large ice, a toasted-rice cracker (senbei) shard.

The savoury one — sister to Oil & Sugar.

  • Rice & Mango — Frozen · the mess
    Direction 5

    Frozen · the mess

The format: rice-with-mango as delicious chaos.

Rice-horchata frappé marbled with mango sorbet. 50 rum · 60 horchata · mango sorbet to taste · lime. Blended with ice, tall glass. A mango chunk and toasted rice.

The playful one — for the terrace and the photo.
